Vegan Buddha Bowl

I came back from Italy last Tuesday and have been working since. Instead of doing a big grocery shop, I did a small shop and bought some vegetables and fruits as a basic stock. I’ve used this week to use up what I have in my cupboard rather than buying more items for my cupboard.

With chickpeas and pearl barley left over from my meal prep, I had it for lunch in a salad. Still, there were leftovers. This mix accompanied with some edamame, raw vegetables (carrots, cos lettuce, sweetcorn), baked aubergine and sweet potato and a serving of buckwheat (soba) noodles. All topped with a tahini dressing which added a creamy texture to the bowl, and some chilli flakes. Bellissimo!!

A bit of an experimental dish but I guess you have to get creative sometimes. What are your favourite leftover bowls?
